Did my mantis defecate on the netting?

Look on the bottom of the enclosure to see if there is any black spots like on the netting.....It may be throwup. offer water.

 
just spray or better mist her container right in front of her, she will suck the droplets better than trying to extract moisture from something else.

 
Usually when you have smearing on the wall sides, it is them spitting up not poop. As others mentioned, make sure to give lots of water to help her clear out her system. I would also hold back any food for the next couple of days until you are sure she is not spitting up anymore.

Is there a reason she is spitting up food?

Also, both enclosures are misted every few days, using an ear bud was just getting water to her there and then.

There could be a few reasons. She could have eaten something that either didn't agree with her system or got to backed up and started to go bad. This is why it is good to try and clear the mantis out first before putting more food on top of it. Sometimes older mantises right before they are reaching the end will have issues. Also, husbandry issues can cause it, namely creating a stagnant environment with a mixture of too much humidity.
