@Sticky pheromones can't be detected by us. It's most likely excess fluid that escaped during a display.

 Try cutting up a superworm or dubia roach and putting the gooey part on her mouth. Have you let any flies loose in there?

Hmm, well I do notice that mantids will stretch their abdomen when displaying. Perhaps some excess fluid escaped when she stretched out. 

You can ask your local reptile store, mine has fruit flies and dubia roaches. Petco has fruit flies, mealworms, and superworms. Bugsincyberspace.com and panterrapets.com have house flies and blue bottle flies. I buy a variety for my little pets. Usually for younger mantids you need fruit flies...

I give mine a selection. I cover the top with organza, then add patches of tulle, skewers, pieces of rough wood, and shelf liner. They choose what works for them. 

Mine are all on the same shelf too, I haven't had any problems. If see one constantly going crazy because it spots another mantis, then yeah, you should move it. Otherwise it should be ok.

I would not recommend ants. Try calling reptile stores near you and see if they carry fruit flies.

Yeah, if he's still a baby it'll grow back. If he's an adult it's no big deal either, they don't need a leg to eat, haha. It should be ok, just keep it fed and happy.
