My mantis has broken his front leg off right at the forearm. Now he just has a hook on the one side. Will this grow back when he molts?

It probably will, if there is any leg left and depending on what instar.

What appears to be a forearm to me is actually a femur on them. The leg segments that are closest to the thorax is the coxae, then femora, then tibiae, and then finally the tarsae.

When I have had mantids lose the entire foreleg, it doesn't usually grow back. When there is some leg left and the mantis is in the first few instars, it is possible that they will grow the whole thing back full size. A later instar mantis that loses part of the foreleg, often will molt out a mini claw. :)
