All 8 of my Mendica nymphs are brown, but most of the ones online are green. At what instar do they usually change color? I think that my biggest is L6 or so.

 
The green nymphs are rare. I've only had three of them out of all the nymphs that turned green before the final molt. They turned green at pre and sub adult. Otherwise, they usually turn green between 2 - 12 days after their final molt.

When I had them they always took about two weeks. Do you think they ever really take 2 days?

Yes, one of the last ones that molted to an adult turned green in two days. It was living in a net with some green ivy in it. I really don't know what makes some turn green and not others. All of mine have changed to a bright green. But other nymphs I sold to people didn't get as dark.

Last fall I had a female that molted to an adult. I was out of enclosures. So, I left her roam free. The majority of the time she stayed on the window screen. Three weeks later she was still brown, and I assumed she was going to stay that way. A net freed up and I put her in a net under the heat lamp, and she changed to green within a few days. I don't think it was the light because she was hanging on the window screen.

 
I see. Is this something in this particular line? Because image searches show green ones more than brown ones.
Where are you searching for images? I did a google image search, and I'm seeing a lot of tan nymphs with some green ones. I think the green ones are later instars.

I don't know if these guys change colors like the wahlbergii. You can try some green plants in your enclosure with some extra heat and see if they turn green with their next molt. Just be sure you have proper ventilation.

Yeah, my wahllbergii male is flushed green. All the red on his stripes have turned green and even his arms are greenish (i mean the whole arm, not just the stripes) its weird.
