Or does the female hold sperm to fertilize future ooths?

I'm in the process of mating my ghosts. She laid an unfertilized ooth before the male was ready. I hope to have them mated before the next ooth is laid.

So do they need to mate between each ooth in order to be sure it's fertilized?

depends on who you ask really i always breed once wait for the second ooth then breed again you don't have to breed every time.

 
No. One mating can suffice for every ooth she makes. However, once you get several ooths you may notice the number of nymphs drop. I normally mate the females and then mate them again after a few ooths just to be sure.

That's super interesting! I'm glad to know the answer to this question myself! Now, can I take it a step further and ask if multiple mates are a good thing or does it matter?

Can't hurt. Not sure about mantids, but some animals can store sperm from multiple males. If that is the case here then you get more genetic diversity.
