I realise they are both female but before i had them they both successfully mated and made ooths now that they have been fertalised once do they need to be re-fertalised for each ooth or is once enough?

Once is enough, but you can breed again because as I understand it, the numbers will decreased with each ootheca if you choose not to remate.

How often do they make Ooth's? and if they mate is it like a guarenteed time after they mate they make one?

You're welcome! How many they lay just depends on species, environment, etc, etc, etc. They'll lay an ootheca whether they've been mated or not, so when they start is based on when they became an adult.
