I do not believe that is the mantids natural color. I think the color and saturation were adjusted in a photo editing program.

Yes, they have enhanced the colors "a bit". The mantis figured is some Prohierodula species.

i dont know if they did enchance the color i would think the leaves also would of been affected maybe

Enhancing or changing only certain areas of a photo is easily done. See this quick example I just made in a couple of minutes... A good rule of thumb is to question something if it looks too farfetched, or just doesn't look right.
