Hi

It usually depends on the species. Some hatchlings can be fed pinhead crickets. I would say that you could probably start feeding a mantis small crickets by L3.

Pretty much all its life, I feed a lot of my hatchlings on micro crickets, and increase the size as the mantis grows.
