What is in my fly culture?

Being new to keeping fruit flies I am unsure what is in my culture. There are very very tiny black specks in the food. They move in a pulsing motion, almost like jellyfish. Not slow like mites. Here is a video (best I could get with a magnifying lens) and a photo to show the scale of how dang small they are. They are not the large black spots in the picture, they are the tiny ones you can barely see. They may be part of the fly life cycle, but I don't want to risk contaminating my enclosures when I'm not sure.

That is perfectly normal. The black specks are the heads of the larvae (if you look closely you will see the body of the larva, the same color as the potato.) The larvae will pupate and turn  into adult flies. It is moving like that because it is eating and getting fat for its transformation.
