Yeast in FF cultures.

As I've been researching ways to improve my media mix, I've noticed yeast is a very common ingredient. What is confusing me is that people are using yeast IN their dry mixes and THEN adding boiling water. Since boiling water immediately kills the yeast, does the dead yeast still serve a purpose? I understand the point of sprinkling live yeast on top of a cooled culture, but don't understand how the dead yeast is necessary unless it still has substantial nutritional value. Any thoughts?

 
The live/active yeast is used to innoculate it, and the dead yeast is used as a protein and vitamin supplement to increase yields. Yeast leftover from brewing beer is sold as a nutritional supplement for people aswell. In australia, where they brew lots of beer, they sell it as a healthy sandwich spread called vegemite.
