I have an adult Chinese female.

Recently, I mated her multiple times and managed to get two ooths. (3 times before the first ooth, 2 times before the second ooth)

In an unfortunate ah....mishap  she ate her companions and has been a widow for the last two weeks or so. I did notice, however, that she was swollen again just as she'd been before laying previous ooths. Now today, I found her creating a third ooth.

My question would be, is it possible that she'd still be laying a fertile ooth -- since she was mated five times and only has lain two ooths -- or is this unlikely?

It is most likely she has retained enough of the sperm in her receptacle for such, that she has fertile ooths for more oothecae. That does not mean that if you were to acquire a new adult male mate for her, that more matings would not be prudent.

Yes. One mating is all that is needed to produce fertile ooths over the life of the mantis.
