Is this an okay terrarium for a ghost mantis or two?

What are the dimensions of the rectangular terrarium?

The smaller terrarium isn't really suitable... in my opinion.

umm I'd be careful. Ghosties don't like it too humid and it looks like it could get stuffy in there

Your right Agent A, I would get rid of the plastic wrap and use some plastic screen cut to big and push it inside to keep it closed, you would have to hot glue the one side to make it like a hinge, but it would work fine and give air. As the others have said the humidity would be a little high in there. Ghosts don't more around a ton so you might be able to keep one in there but I wouldn't keep more than that.
