I see a baby hatch out every few days and have plenty of springtails but can't figure these guys out.

You mean in terms of feeding them? Maybe some other feeder that's small enough? I've raised ground mantids (caught in Las Vegas) from 2nd instant to adult. They're really easy BUT like you said that first instar is murder.
