So I took a glance at my mantis and noticed she was on her back...once I helped her back on her feet I noticed she was very unbalanced and noticed she is running and jumping to weird areas. Also, when I put anything in front of her she strikes it as if it was prey. I was thinking she was irritated from not being able to catch the food I put in the terrarium but Idk...please help.

If she is striking but not catching, she is most likely just irritated and defensive. Jumping and running around frantically are all signs of your mantis being freaked out. It's possible she got freaked out from you helping her back on her feet, if you look at it from her view, you are a giant unknown danger which grabs her like a predator grabs his prey and suddenly releases her. So she will take her sudden chance to live again to run away as fast as she can. The last picture you posted, she was in defense/threat pose. That's where mantises try to make themselves appear bigger so their predators/competitors will leave them alone.

Just let her rest alone for a while, leave her in a quiet and corner where she won't see any movement, she'll calm down and recover just fine.

 
To a lesser extent, this type of behavior can be exhibited pre-molt (refusing food, irritable). Aryia's advice is certainly sound and my idea also on the way to proceed.
