I have had nymphs eat skins of fruit before and peanut butter!

 
Wikipedia says in the wild they'll eat bananas too. It said they suspect it's a nutritional supplement, but they don't really know for sure.

 
I've been wanting to order a butterfly cage and put an orchid plant in it for my orchid mantis. Would be nice. Would also require a compact fluorescent to keep the plant alive but you'd have to keep the bulb far so you don't cook the mantis.

My chameleons benefit from eating their ficus trees. It's hysterical too so I benefit. haha

I could see the mantis intake some good nutrients or something from eating their greens.
