once having been mated with, will the female lay fertile eggs for the remainder of her life? or will she lay only one fertile egg until mated with again?

One mating is enough to fertilize her for life.

 
It depends on species,some will lay 8-17 ooths and in those cases you'd have to rebreed,after about 6 fertility and numbers are lost in most species when it comes to ooths,so I don't think that is really true,as a female will continue to lay ooths until she is oothbound or nearing the end of life,in larger species you'll get more like 3-6 ooths max and in those one mating may be enough

In my experience this is not always true, species like Sibylla pretiosa (that are incredibly prolific) stop being fertile after the 17th ooth or so, but continued to lay into the 20's.
