Will the female always eat the male during mating or is there a chance she won't?

It does not always happen. Especially if you keep your female occupied with other food items while the male makes his approach.

It doesn't happen very often if the female is fed

The female mantis eats the male because she's hungry, not because that's a part of the courtship ritual. Keep both of them well fed and introduce them carefully and you should be fine.
