Small Mantids

Are there any mantis species that would be fine eating fruit flies their entire life?

Sure, but most are not in the hobby right now, trying to think of the last one I had, very pretty mantis, oh, multicolor I think their name was. I have one in the freezer.

Yeah Acontista multicolor are pretty tiny. I haven't kept them myself though.
