Mating . . . twice? once?

hey guys. I mated my two egyptians and It's been a little more then a week since. Do I need to mate them again , or is once fine?

When Can I be expecting her to lay eggs?

 
She will lay when ready. Mating has no determination on when she lays an ooth. One mating is usually enough to fertilize all her eggs she will lay, however you may notice fewer nymphs emerge with some of her later ooths. You can remate her again after she lays a few ooths. It is all up to you. If you have males, then why not?

Unfortunately Rick, when I was taking some dead cricket remains out of godfreys cage he crawled out. As usual, I put my finger in front of him and waited for him to reach out. Instead, after a few seconds, he just flew off. I saw him fly into the bedroom and pursued immediately , but have had no luck in finding him. He's never done this before and I found it very odd. I'm quite gentle when it comes to handling . Clover was in my other hand . . . do you think he freaked out because of her?

though even if I did still have him , I would not mate them again. I want as little nymphs as possible.

No. He did what most male mantids will do when given the opportunity; fly away. If you got a good mating you will be fine.
